Abstract
Diabetes mellitus(DM)is the disease in which the body dose not produce enough insulin or can’t use its own insulin as well as it should. It causes sugar to accumulate in the blood(hyperglycemia), and leading to various complication. The Department of Health in Taiwan reported that diabetes was the 5th leading cause of death in Taiwan in 2008. It represents that diabetes is coming to a serious health problem that we have to concern. In present study, I used some cereals that have been concerned with hypoglycemic effect as material to produce expansible extruded cereal products. The contents of the formula are brown rice, rice bran, dehulled adlay and adlay bran. And the objective of this study was to evaluate the effect of extruded cereal product on physiological metabolism in STZ induced diabetic rats. The results of this study demonstrated that the extruded cereal product with or whithout resistance maltodextrin wouldn’t affect the carbohydrate and lipid metabolism of STZ induced diabetic rats. But taking the extruded cereal product could reduce plasma TBARS of STZ induced diabetic rats.
