Abstract
In this study, we have proved the application of rhamnogalacturonase (RGase) in the field
of fruits and vegetable processings. Results indicated that RGase can increase the juice
yield, color extraction, filterability, clearance, stability of apple and grape juice processing.
We also purified and partial characterized this enzyme’s properties. RGase gene
fragment from Aspergillus aculeatus has been cloned, sequenced and expressed in E. coli.
