During the first year, we have proved the application of rhamnogalacturonase (RGase)
in the field of fruits and vegetable processings. We also purified and partial
characterized this enzyme’s properties. Results indicated that RGase can increase
the juice yield, color extraction, filterability, clearance, stability of apple and grape
juice processing.
