Abstract
There is a Chinese Tahitian population descended from free migrants dating from the early 20th century. These Polynesians of Chinese origin have contributed to the popularity of maa tinito (Chinese cuisine) on Tahiti till this day. However, an analysis of the development of two well-known Chinese dishes in maa tinito (fried ground pork with red beans over rice) and poisson cru a la chinoise (raw fish with vegetables) reveals local origins reflecting to meagre immigrant beginnings and their farming background. The presentation of local Chinese cuisine takes place in a constant dialogue with other Chinese, fellow Ma'ohi, Demi and French citizens.
