Abstract
Today, ice cream has a huge production. According to the International Dairy Foods Association (IDFA), in 2006, 1.55 billion gallons ice cream was produced in the United States and by this production the USA was the leader of world in annual ice cream production (IDFA, 2008). The most popular ice cream flavors, in the USA, are vanilla, chocolate, and butter pecan, respectively, 30%, 10% and 4%. In this study, we proposed a HACCP plan for Chocolate Ice Cream Production.
