Abstract
This study aims to evaluate the
antimutagenicity and antioxidative activities
of kefir. The Ames test was used to
determine antimutagenic activity, whereas
antioxidative enzymes activity and reducing
power were used to evaluate the antioxidative
activity of kefir. In both cases of direct- or
indirect-acting mutagens, the antimutagenic
activities of kefir were significantly greater
than those of unfermented milk. Kefir
demonstrated significantly greater reducing
power, but reduced glutathione peroxidase
(GSHPx) activity than was the case for milk.
There was no significant difference between
milk and kefir as regards superoxide
dismutase (SOD) activity. These findings
have demonstrated that kefir possess
significant antimutagenicity and antioxidant
activity, thereby suggesting that kefir is a
potential candidate for the role of useful
natural antimutagenic and antioxidant
supplements for the human diet.
