2004-01-012024-05-14https://scholars.lib.ntu.edu.tw/handle/123456789/657515摘要:穀豆類富含有多種具有生理機能之成分,例如膳食纖維、抗氧化物質、植物性雌 激素等,其主要存在於麩皮或種皮,或胚芽及子葉中。一般認為種子在經過短時 間的發芽後其生理活性物質的種類與含量會改變,而對其營養價值會有所改善。 因此,穀豆類本身或其芽與苗草,及其加工製品實為具有生理機能性之保健食品 的良好原料來源。近年來,由於黃豆之植物性雌激素—異黃酮可被用來進行天然 植物雌激素替代法來治療婦女更年期之不適症狀,同時發現服用植物雌激素不會 導致乳癌、心血管疾病等,致使從天然植物食材中尋找具有雌激素活性或其前趨 物質的研究備受重視。除此之外,穀豆中所富含的膳食纖維可作為益生物質具有 促進腸道益生菌生長,進而轉化植物雌激素為具生理活性物質,同時降低腸內 pH值促進鈣質吸收,可防止更年期婦女的骨質酥鬆症。因此,省產黑豆、黃豆、 及綠豆及紅豆及其他穀物之種子或其幼芽與苗草均是研發針對停經後婦女具綜合 保健功效之功能性食品的良好研究食材。 本研究之主要目的有二: 1.豆類(黑豆、黃豆、綠豆及紅豆)發芽及生長期間之膳食纖維與植物雌激素之含 量變化--停經後婦女保健功能性食品成分之開<br> Abstract: Cereals and legumes contain many functional ingredients, including dietary fiber, antioxidants, and phytoestrogens, which are usually concentrated in seeds bran, seed coat, or germ. It has been found that the bioconversion or secondary metabolites during short time germination of seeds improve their nutritive values. Therefore, the legume seeds and their sprouts or whole grains and their young leaves are good sources of prebiotics, antioxidants and phytoestrogens. Lately, the Natural Hormone Replacement Therapy (N.H.R.T.) is used to treat the symptoms of postmenopause without the side effects, such as breast cancer, cardiovascular disease. To find the good sources of bioactive phytoestrogens from regular foods have been noticed and are on coming from the fields of nutrition, food science and clinical studies. Besides, dietary fibers in cereals and legumes recognized as prebiotics, which will lower intestinal pH and increase the absorption of Ca, which the osteoporosis may be prevented. The prebiotic also improve the flora of colon and increase the bioconversion of inactive phytoestrogen into bioactive forms. Therefore, black soybean, alfalfa and paddy rice are considered as good materials for the study of multifunctional foods for the postmenopausal women. The objectives of this project are as followings 1.Extraction and quantification of prebiotics and phytoestrogens in seed and sprout of legumes (black bean, soy, mung bean and azuki bean). 2.
