2008-03-012024-05-15https://scholars.lib.ntu.edu.tw/handle/123456789/663433摘要:2006年衛生署公佈國人十大死因中,惡性腫瘤仍屈居於首,其中胃癌排名第五位,對於國人的健康安全上造成嚴重的威脅。引發胃癌的原因有很多,飲食習慣則是最主要的原因,如煙燻、醃漬或高鹽食物及飲酒,對胃黏膜細胞而言皆屬於危險因子,進而對胃部造成嚴重的傷害,以酒精而言,會延緩胃部的淨空,減少腸道的蠕動以及增加黏膜的滲透性,當然,目前的研究中,多攝食綠茶、咖哩、維生素C、維生素E與胡蘿蔔素等抗氧化物,皆是對於胃黏膜細胞具有保護的效果。人類的生活史中,乳酸菌扮演著舉足輕重的角色,舉凡乳酸、發酵乳製造等,均藉由乳酸菌之發酵提供食品特有之風味及多樣化,應用範圍極廣,頗具經濟價值;乳酸菌屬於益生菌株 (probiotic),文獻中已証實其中含有許多的益生效果,如:增進食物的營養價值、促進維生素的合成及酵素的產生、穩定腸內道菌相之平衡、提高宿主免疫力、降低大腸癌之風險及抑制腫瘤、降低膽固醇含量。除了上述之益生效果外,近年來的研究中指出,乳酸菌及其發酵乳亦有胃部保護之效果,能有效提高胃黏膜組織之完整性。有鑒於此,將以乳酸菌作為胃部保護之實驗樣品,進一步的評估是否可有效降低胃部的損傷。<br> Abstract: According to statistics by Department of Health in 2005, the malignant tumor has been the top reason causing death for Taiwan. Gastric cancer lies in the fifth of malignant tumor diseases. There are many reasons which cause the gastric cancer. The diet habit is a main factor for gastric cancer, such as eat a diet with the food that are smoked, salted, pickled, and alcohol, all those are the risk factors as gastric mucosal membrane cell, and then cause the serious injury to the stomach. As for alcohol, could delay the gastric emptying, reduce the wriggling of the intestines and increase the permeability of the mucosa. Many reports indicated that green tea, curry, vitamin C, vitamin E, beta-carotene and others anti-oxidant substance have better protecting effect on stomach. Lactic acid bacteria (LAB) are a phylogenetically related group of anaerobic Gram-positive bacteria that have been used for centuries in the preparation and processing of foods and beverages. LAB were used extensively for lactic acid and fermented milk production and the fermented products with specific favor and variety, they have high economic value. LAB are commonly known to have health-promoting attributes, including enhancing nutrition value of food, anti-mutagenic activity, anti-carcinogenic, hypercholesterolemia properties, antagonistic action which can restrain the intestinal and food-borne pathogens, and immuno-modulation effects. However, LAB and its fermented milk also have promoting effects on gastric protection, enhancing gastric mucosal integrity.
