2013-07-012024-05-15https://scholars.lib.ntu.edu.tw/handle/123456789/662741摘要：台灣被譽為全球第一的石斑魚養殖國，但是高超的技術帶來過多的產量將成為隱憂。冷凍真空包裝的三清魚比較容易儲存可以降低運銷成本並且有產期調節的功能，而可促進餐廳與家庭的消費，降低過剩跌價的風險，同時具有外銷歐美與中國大陸的潛力。但是三清魚的生產必須耗費大量人工與成本於魚鰓、內臟與魚鱗的清理。因此本計畫將評估選用高壓噴水、刷除與刮除等魚鱗去除機制，並挑選最適用者設計一台石斑魚除鱗機的試驗機，並進行試驗改良，以作為發展商品機的基礎。<br> Abstract: Taiwan has been recognized as the global leader in grouper farming. But recently over production might be a potential problem. Developing vacuum packed frozen drawn grouper that has long shelf life and less handling cost might increase local consumption in restaurants and family tables and thus to stabilize the market. To remove entrails, gills and scales from groupers is both laboriously and costly. A grouper scaling machine is proposed in this project. The best one of three major scaling mechanisms, i.e. pressure jetting, mechanical brushing, and scraping will be evaluated to be chosen for the machine design.
