2019-03-012024-05-17https://scholars.lib.ntu.edu.tw/handle/123456789/695893摘要:農產品初級加工及加值化是目前政府單位的推動重心。從機能保健活性的產品研發,最能達到農產品加值化。臺灣藜與山當歸是臺灣物台地區的原民作物,具有開發保健機能性之潛力。臺灣藜具有降血糖、抗氧化等功效,而山當歸則是具抗血小板 凝集之活性。然而,對於臺灣藜與山當歸之活性成分尚未明確。本計畫利用液相層析串聯高解析質譜,針對臺灣藜及山當歸進行代謝質體學的研究,將全面性的探討原民作物中的植化成分,包含甜菜色素、酚類化合物、皂素及香豆素等。原民作物 的植化成分分析可做為原料品質分級之科學依據,有助於填補原民作物機能性產品開發之研發缺口。<br> Abstract: Primary processing of agricultural material and value-added agriculture are the major projects in council of agriculture. Developing the functionality product is a best way to add value to agriculture. Chenopodium formosanum and Peucedanum formosanum Hayata are the aboriginal crops grown in Wutai in east Taiwan. Chenopodium formosanum has the anti-oxidative effect and hypoglycemic activity, and Peucedanum formosanum Hayata has the anti-platelet aggregation activity; both have the potential to be a functional food. However, the bioactive components are still unclear in Chenopodium formosanum and Peucedanum formosanum Hayata. This study aims to comprehensive characterized the phytochemical components of the aboriginal crops by metabolomic strategy using the ultra-performance liquid chromatography coupled with high-resolution mass spectrometry. The betalanins, phenolic compounds, saponins and coumarins were analyzed.
