徐源泰2006-07-262018-06-292006-07-262018-06-291999http://ntur.lib.ntu.edu.tw//handle/246246/18192在研究計畫工作中,已先後自Aspergillus aculeatus 菌株中,選殖出部份基因片段, 定序並轉殖入大腸桿菌中可表現部份酵素活性。先前試驗並已完成此酵素 Rhamnogalacturonase (RGase)在蔬果加工應用之價值評估,包括提高蘋果、葡萄等 之果汁榨汁率、色素抽出率、便於過濾提高澄清度、及增加安定性等。研究中並 完成純化與部份定性之工作等。In this study, we have proved the application of rhamnogalacturonase (RGase) in the field of fruits and vegetable processings. Results indicated that RGase can increase the juice yield, color extraction, filterability, clearance, stability of apple and grape juice processing. We also purified and partial characterized this enzyme’s properties.
