2013-08-012024-05-17https://scholars.lib.ntu.edu.tw/handle/123456789/685520摘要:現代社會中,食物從農田到餐桌的距離遙遠,對於「食」這件事,社會大眾也面臨更多 不明的風險。例如,近幾年來台灣發生數起的食品風險事件,包括毒奶粉(三聚氰胺)、 塑化劑、美國牛肉(萊克多巴胺)爭議事件,還有每隔一段時間就出現的蔬果農藥殘留 問題等。媒體在食物風險訊息的傳遞,與消費者的感知上,扮演一個相當重要的角色。 媒體不只傳遞風險,也重新定義的風險。媒體參與了風險的產生與操弄,以及風險的協 商和轉移。因此值得問的是:媒體報導如何形塑食物風險訊息?社會大眾在每天生活的 食物消費實踐中,如何面對風險以及詮釋媒體傳遞的風險訊息? 此外,農民也可能和食物風險有關連。例如,農民的農藥使用知識與行為,可能影響蔬 果是否殘留農藥。綜合上述討論,本研究預計以三年時程,從農民、媒體,消費者三個 面向,探討食物風險的論述與傳播。這三年的計畫分別為:(一)農民農藥使用知識與 農藥殘留風險的論述與傳播,(二)食物風險的新聞建構—風險傳播模式與媒體論述的 轉變,(三)媒介訊息、風險管理與日常食物消費實踐。 <br> Abstract:In modern society, people eat food from the diverse places in the whole world. The distance of food from farm to dining table is farther than ever. This may result in the public facing many uncertain food risks in consuming food practice in their everyday life. For instance, several food scandals happened in recent years in Taiwan, including “poison milk”, “plasticizer event” and the controversy of American beef (with Ractopamine) imported. Mass media play an important role in transmitting the risk message and influencing consumers’ perception of food risk. However, media not only convey the risk information but also redefine the risk. Media participate in the production and manipulation of risk, and the negotiation and transformation of risk. Therefore, the interesting question is how media construct the risk information. How do the public in their daily food consuming practice to handle the risk and interpret or be influenced by the risk information conveying by media? In addition, the food producers—farmers are also associated with food risk. For instance, farmers’ knowledge and behavior of pesticides usage might be associated with the pesticide residue in vegetables and fruits. However, little has known about how the farmers’ knowledge and understanding of pesticide usage and residue, and how the knowledge has been formed in related to their farming experience, social interaction, and social value. Therefore, this three-year study is designed, from the three aspects of farmers, media, and consumers, to explore the discourse and communication of food risk.從農田到餐桌:食物風險的論述與傳播
