2006-08-012024-05-13https://scholars.lib.ntu.edu.tw/handle/123456789/654470摘要:本計畫目的在探討電解水和弱酸性之高濃度次氯酸水(HSW)在芽苗菜培育上之應用適性,以研究出能減少芽苗菜被微生物污染,且能促進其生長及品質的實用方法。今年計劃擬探討電解水和HSW在黃豆芽培育上之應用方法。實驗細分為四部分進行,第一部分探討浸種時間、培育溫度、培育用水和生長/品質促進劑處理等對豆芽生長及品質之影響,以闡明豆芽在不同生長條件下之發芽率、生長曲線、生長速率、收穫率和品質等,並找到較適當的培育條件以作為植物工廠及一般家庭DIY生產培育豆芽之參考。第二至第四部分實驗分別探討電解氧化水/弱酸性高濃度次氯酸水(EOW/ HSW)、電解還原水(ERW)及EOW/ HSW &ERW組合處理等,對豆芽生長及品質之影響。由實驗之結果,應該可以瞭解這些處理水之殺菌效果、漂白效果和對豆芽生長之促進效果,並找出在植物工廠及一般家庭DIY生產培育豆芽之情況下,使用EOW/ HSW、ERW及EOW/ HSW&ERW組合處理之較適當的方法。<br> Abstract: The purpose of this project is to eliminate microorganism contaminations and to improve growth and qualities of sprout and seedling vegetables using electrolyzed water and high chlorite soft acid water (HSW). Soybean sprout is to be studied in this year. The study is divided into four parts. In the first part, effects of soaking times of seeds, cultivating temperatures, types of cultivating water, and types of cultivating adjuncts on sprouting rate, growth curve, growth rate, harvest index, and qualities of the sprout will be studied. Appropriate conditions for cultivating the sprout under plant-factory conditions and family-DIY conditions, respectively, will be deduced from the results. In the 2nd, 3rd and 4th parts of the study, effects of electrolyzed oxidizing water/high chlorite soft acid water (EOW/ HSW), electrolyzed reducing water (ERW), and combinations of these waters, respectively, on growth and qualities of the sprout will be investigated. It is expected that bactericidal effects, bleaching effects and growth promoting effects of the waters can be elucidated from the results of these studies.
