2020-07-012024-05-17https://scholars.lib.ntu.edu.tw/handle/123456789/691360摘要:部分發酵茶為臺灣主要生產的茶種類,不論生產技術或產品品質皆在世界上具領先地位。但部分發酵茶製程繁複,目前無自動化機械生產,生產需耗費大量人力,無法量化生產一致性之高品質茶葉。為提高部分發酵茶生產量能,需先建構一茶葉製造關鍵進程智能判斷系統,才能進而開發全自動化製茶設備。部分發酵茶製程傳統上主要依據氣味變化決定作動時機,因此本計畫擬藉由氣味監控進行自動化判斷系統開發。影響部分發酵茶品質最主要的製程步驟為攪拌與炒菁,要開發茶葉製程關鍵作動時機自動化判斷系統,需先探討攪拌與炒菁兩關鍵製程之最適時機,並找出關鍵時機當下氣味指標及其閥值,配合高感度電子鼻系統之開發,進行製茶過程中茶菁氣味變化監測。結合關鍵作動時機氣味指標參數及氣味監測系統,整合出一套製茶作動時機自動化判斷系統,並利用製茶比賽實際驗證及進行相關參數調整,完成「利用氣味監控建構製茶體系」之開發。本研究之開發成果,將可協助臺灣部分發酵茶製造進入省工、高品質、高產量之新里程碑。<br> Abstract: Partially fermented tea, also called oolong tea, is the major tea of Taiwan. We lead the manufacturing technique and the quality of Taiwanese oolong tea in the world. However, the manufacturing process of the oolong tea is complicated and it is hard to make oolong tea by automated machine by now. Oolong tea production is dependent on man, because of both the skill and the work. That makes the limitation of producing high-quality oolong tea in the amount. To improve the oolong tea producing potential, establishing an artificial intelligent judging system of the tea manufacturing process is needed for the automated oolong tea manufacturing system. In the oolong tea manufacturing, the master decided each process mostly by smelling the change of the odor in the traditional way. That is the central idea of our plan to develop an artificial intelligent judging system by sensing the volatiles during the manufacturing process. The two major processes affecting the oolong tea quality are the shaking (stirring) and firing. The good timing control of these two processes is important and essential to the artificial intelligent judging system development. In this study, we will analyze the volatility of the manufacturing process and tea quality to find out the potential volatile compounds as the index of the developing high sensitive electronic nose system. This electronic nose system will be monitoring the change of the volatiles during oolong tea-producing. By integrating the key volatile index of the shaking and firing and the volatile monitoring system, we will create a new automated timing judging system for the tea manufacturing process. The new system “volatile artificial intelligent monitoring in oolong tea manufacturing” will be adjusted and verified by the official tea manufacturing contest.
