2010-01-012024-05-17https://scholars.lib.ntu.edu.tw/handle/123456789/673703摘要:本研究以&#64038;會中國的服務&#63791;動為窗口,試圖&#63930;解中國&#63791;動體制的資本主義化,以及 與消費社會/文化之發展的&#63898;結。跨國資本(含台資)以合資或獨資的方式進入中國的服 務業市場,訴求的消費者包括中國的新富階級與隨外資牽動的專業移民。其中,受雇者 的服務工作與身體&#63791;動承載、體現&#63930;跨國資本所營造、販賣的「時尚&#65379;氛圍與「現代&#65379;生 活風格,然而,由於本地&#63791;動&#63882;的短缺以及服務員的低下地位,此一產業的&#63791;動&#63882;&#63789;源 大&#63870;仰賴&#63789;自農村與外&#63853;的&#63946;動人口,後者通常被&#63898;結於「&#63768;後&#65379;、「傳統&#65379;的貧窮中國。 新興服務業雇用的多是中國的「八&#63922;後世代&#65379;,其中有許多是所謂「第二代民工&#65379;,本研 究將探討中國的&#63886;輕&#63791;動者(也是消費者),如何被市場制&#64001;與消費文化召喚、改造成為 資本主義的生&#63882;軍。我也將討&#63809;服務業職場如何在日常的&#63791;動與消費中再製、協商階級 &#63847;平等與城市/鄉村、全球/在地的差&#63842;。我選擇研究&#63847;同市場等級的跨國資本經營的餐廳, 以田野研究(實作&#63851;與觀察、深入訪談)的方法&#63789;考察其中的&#63791;動體制、&#63791;動過程、互動服務。 在&#63972;&#63809;的研究目標上,我希望透過中國的個案,深入&#63930;解&#63791;動&#63882;商品化、服務業工作、 &#63791;動與消費的&#63898;結等議題。 <br> Abstract: Serving Consumer China: Service Labor and Work Ethic in Urban China This research looks at service labor in urban China as a microcosm of the capitalization of Chinese labor regimes in linkage with the development of consumer culture/society. Multinational capital has entered Chinese service industries, in the forms of joint venture or sole ownership, to target consumers including the Chinese new rich and expatriates who emigrated in parallel with the move of capital. The bodily labor of service workers embodies and promotes signs, auras and lifestyles cultivated by multinational companies. Those hired by the new service industries are mostly from the post-1980 generation in China, many of whom are so-called “new-generation migrants.” This research will explore how Chinese young workers (simultaneously consumers) are interpellated and transformed by market institutions and consumer culture into capitalist subjects. I will also examine how service workplaces reproduce class inequalities and urban/rural, global/local differences in the everyday lives of work and consumption. I will study restaurants across various market levels run by foreign capital in Shanghai. Collecting data through participant observations and in-depth interviews, I will examine labor regimes, labor process and interactive service in these restaurants.
