2005-01-012024-05-16https://scholars.lib.ntu.edu.tw/handle/123456789/669882摘要:異硫氰酸酯是植物二次代謝物硫醣甘受到硫醣甘水解酵素作用後之主要生成物。近年來,多方面的研究結果己確認硫醣甘具有預防一些癌症發生的功效,因此被認為是一種具有生機功能的保健物質。十字花科蔬菜為含硫醣甘之主要作物,而國人日常食用的許多小葉菜類均為十字花科的蔬菜,所以十字花科蔬菜因為可以提供攝食者硫醣甘而更加受到重視。本研究擬由園藝作物觀點針對各種類及主要品種,分析其總硫醣甘含量,並探討其在採收後之變化,期提供生產者、育種者、運銷者及消費者之參考。<br> Abstract: Isothiocyanate(ITC) is one of the hydrolyzed product of glucosinolate, a secondary metabolite of plant, by the thioglucosidase “myrosinase”. In recent years, results from many researches have indicated that ITC has chemopreventive effect against certain cancer, and ITC and glucosinolates are regarded as important biofunctional plant constituents. Since glutathiones mainly exist in cruciferous vegetables, and these vegetables are the major dietary vegetable consumed by our people; it is important to obtain more information about the ITC contents of our daily vegetables. This project will use the method of Jiao et al.(1998) to analyze the total ITC content in different species and cultivars of cruciferous vegetables grown in Taiwan and to study its changes during postharvest period. The method is based on the cyclocondensation of ITC with 1,2-benezedithiol to form 1,3-benzodithiole-2-thione. The product is then separated by a reverse phase HPLC and detected at 365nm.
