2009-02-252024-05-15https://scholars.lib.ntu.edu.tw/handle/123456789/663660摘要:台灣的飲料市場為成熟產業,為因應消費者各種多變的需求、擴大市場佔有率並達成業績利潤目標,飲料業者間的競爭激烈,每年不斷推出飲料新品。加上消費者喜好性,主導了近幾年的飲料消費潮流。目前整體食品市場逐漸走向健康與天然的訴求,商品多以強調機能特性為取向,使市面上產品種類的層次更趨複雜。衛生署現行的「飲料類衛生標準」僅將飲料產品區分為三大類(含碳酸、不含碳酸及含乳成品或乳製品之酸性飲料),顯已不足涵蓋所有品項,有重新檢討之必要。 因此,本計畫將蒐集國際間對飲料類食品之定義、管理及衛生標準等資料,進行歸納分析。同時就市售各類產品抽樣調查,分析檢驗微生物和重金屬含量,並邀請國內飲料業者和學者專家,商討擬定出適用於我國飲料之產品分類及衛生標準。擬定具體管理對策與措施,並提供修正標準時,政府向民眾說明所需之風險溝通說帖草案。 <br> Abstract: The beverage market in Taiwan is fully developed. Beverage companies are in great competition due to the pressures of changing consumer need, attempting to increase the market share, and, as always, profits. Therefore, many new beverage products are developed every year in the retail market. In addition, due to the preference of consumers and the trends for beverage in recent years to move to health and nature claims, many beverage products claim to have functional properties. The Beverage Hygiene Standards of Department of Health, Executive Yuan, R.O.C. published in January 2008 that there are only three categories of beverages: (1) Carbonated beverage, (2) Non-carbonated beverage, and (3). Dairy-based acidic beverages. This, however, does not include all beverage products in the retail marketplace. Therefore, the hygiene standards of beverages need to be revised. This proposed study will collect and analyze information about the definition, food hygiene management, and hygiene standards of beverage categories from other countries. An investigation on the microbial and heavy metal contents of beverage products in the retail market will be concurrently conducted. Additionally, beverage producers and specialists will be invited to give their opinions for a suitable draft for the beverage categories and hygiene standards.
