2009-02-272024-05-14https://scholars.lib.ntu.edu.tw/handle/123456789/657731摘要:本計畫主要目的為進行國產水稻機能性成分的含量分析,並評估這些機能性成分的免疫調節功能,以便建立國產高機能性成分含量的水稻優良品系資料庫及供作開發稻米保健食品之重要科學依據。近年來國內外有關稻米品質的研究有顯著增加,各種品質相關因子的遺傳、生理甚至分子的研究逐漸累積,且也成功育成多種不同的水稻品種,然而對稻米的特殊機能性成分[如生育醇(tocopherols; T)、生育三烯醇(tocotrienols; T3)及γ-谷維素(γ-oryzanol; GO)]的研究則非常有限。雖這些機能性成分在國際市場上已具有非常好的商業價值,但國產水稻主要機能性成分(T、T3、GO)在穀粒及各組織器官的分佈情形仍欠缺分析,且其生理功能亦尚待評估。因此有必要深入了解國產水稻的主要機能性成分含量及生理功能(如免疫調節活性)。此結果將可供作開發國產稻米保健產品與提高水稻利用率及附加價值之必要基礎。<br> Abstract: The present project aimed to examine the content of functional compounds in the local rice and evaluate their immunomodulatory properties. This study will provide information for establishing a database of elite rice species with high functional components, and scientific evidence for the development of rice-based functional foods. Recently, there has been an obvious increase in the research on improving the rice quality both locally and internationally. Knowledge on different genetic, physiological and molecular factors that related to rice quality have gradually accumulated, many different varieties of rice have also been successfully bred. However, research on their functional components [e.g. tocopherols (T), tocotrienols (T3) and γ-oryzanol (GO)] remains limited. Although these functional compounds have been recognized to have high commercial value in the international market, their content and distribution in different plant parts of the local rice species and their physiological functions have not yet been analyzed and evaluated. Therefore, it is essential to have an insight study on these areas.
