2020-01-012024-05-15https://scholars.lib.ntu.edu.tw/handle/123456789/663489摘要:本計畫目標在於尋找電漿處理綠豆以提高綠豆芽GABA濃度之最佳條件,包括電 漿機型、氣源、能量及操作程序等。擬將此綠豆芽製成冷藏高GABA精力湯及以綠豆 芽汁為主原料,添加檸檬汁、柳橙汁及/或葡萄汁,常溫儲藏瓶裝或罐裝之高GABA綠 豆芽蔬果汁。其製程及各加工步驟之品管標準將移轉於給業界,以響應政府大糧倉 計畫、提高綠豆耕作面積,並促進國內農產品高值化。 本計畫之研究架構以(1)改良及創新電漿設備、(2)確立低溫大氣電漿處理綠豆 及培育綠豆芽之最適條件、(3)開發以綠豆芽為主原料,國產蔬果為副原料之冷藏精 力湯及常溫蔬果汁等為主進行研究。 本計畫之預期效益:(1)本計畫開發之高GABA綠豆芽精力湯及蔬果汁在技術移轉 正式生產後,預估產值每年可達3.5億元,(2)上述產品將有促進國民飲食均衡,增 進健康之功效, (2)可望提高國產綠豆種植面積400公頃, (3)有助於國內蔬果之產 銷平衡,(4)此計畫之研究成果,將兼有應用及學術價值,利於後續電漿在農業及食 品加工業使用之發展。<br> Abstract: The primary goal of this proposal is to find the optimum parameters, such as the plasma model, gas, power and operating procedures, for the plasma treatment of mung beans to increase the GABA concentration of mung bean sprouts. The mung bean sprouts are then used as the functional ingredient of products including cool storage high-GABA of living vegetables (with lemon juice, orange juice and/or grape juice added) and bottled (or canned) high-GABA mung bean sprouts and vegetable juices, which will be stored at room temperature. Once this project is successfully carried out, the quality control standards of its manufacturing process and processing steps will be transferred to the industry and the local Taiwanese cultivation area of  ​​mung bean cultivation is expected to expand, and the value of domestic agricultural products will also be increased.
