2004-01-012024-05-14https://scholars.lib.ntu.edu.tw/handle/123456789/657883摘要:本計畫執行之目的為篩選具有發展潛力之保健用菇類,並建立潛力菌種液體發酵 之最適產程,期能提供促進相關健康食品之研發,進而輔導業界轉型與其產業之 技術提昇。本年度計畫架構共有10個分項計畫工作,預期達成之成果為:(1)建 立複篩資料庫。(2)完成香菇菌種發酵產物之機能性成分分析及評估實驗。 (3)完成裂褶菌菌株五公升發酵槽液態培養較優化條件探討。(4)對HepG2及 Hep3B肝癌細胞進行生長抑制率與型態學變化,另外對癌細胞亦同時進行直接抑 制模式作用,由in vitro免疫力變化篩選出最佳靈芝或巴西洋菇發酵條件。(5)確 立台灣紫芝抗腫瘤多醣及生物活性代謝產物之深部培養法生產體系。(6)篩選高 生物活性之巴西洋菇菌種,建立功能性指標成分與豆類培養基之發酵製程。 (7)朱紅栓菌以太空包木屑栽培法,建立栽培出菇條件;在液體發酵的研究子項 裡係以搖瓶(500 ml)或5公升發酵槽進行液態培養條件之探討。(8)癌症治療 後服用菇類多醣體保健食品之免疫功效評估。(9)尋求去除citrinin 並保留 monacolin K 與GABA 生成量的方法,再進行紅麴機能性食品之<br> Abstract: The purposes of this project are screening of edible and medicinal mushrooms with industrial potential and establishing their optimal processing of submerge fermentation. There are ten items consisting in this project. The final results anticipated as follows: (1) The screening database of potentially edible and medicinal mushrooms will be constructed. (2) The analysis and assessment of functional components of Lentinula edodes L15 will be performed. (3) The optimal conditions for 5L fermenter liquid culture of Shizophyllum commune will be obtained.(4)For HepG2 and Hep3B hepatoma cells, the growth inhibition and morphological changes are studied. For reference, incubation of 3 cancer cells with fermentates (Direct Mode) will be performed. Optimal fermentation conditions will be determined by means of in vitro immunity tests.(5)Develop an optimal fermentation process for production of antitumor polysaccharides and bioactive metabolites from Ganoderma formosanum. (6)To obtain a strain of Agaricus blazei with high bioactivity. And to obtain an optimal culture medium and process with leguminous plants as substrates.(7)In plastic bag cultivation, the condition of getting Pycnoporus cinnabarinus fruit bodies will be established at growing farm.
