2018-01-012024-05-14https://scholars.lib.ntu.edu.tw/handle/123456789/659863摘要:為提高食蛋安全與保存性並有效降低禽流感傳播及沙門氏桿菌污染等問題,美國及日本等國家長久以來實施禽蛋洗選並搭配油臘處理或低溫冷鏈運輸,其洗選相關技術已相當純熟並達到良好保存效果, 由於台灣明年底將全面實施洗選蛋政策,未來勢必面臨設備提昇、冷鏈配套、後續保存及蛋品分級等問題,為順利推動該項政策並應因未來挑戰,因此本計畫目的是前往蛋品市場活絡與蛋品加工技術成熟之美洲地區國家,實地瞭解當地目前洗選及包覆方式、冷鏈產銷運作情形以及洗選蛋保存期限、上架環境與標示方式等相關問題,將可做為我國全面推動與輔導洗選蛋政策之參考。<br> Abstract: In order to improve the safety and quality of shell eggs and reduce the spread of avian flu and the contamination of Salmonella enteritidis , the washing-egg policy have been implemented for a long time and carried out successfully in USA. USDA also indicate egg washing procedures improve the safety of shell egg and reduce contamination risks. The related technologies including washing method, oil-coating process and cold chain transportation have been quite well-established and have achieved good preservation effects. Due to Taiwan government will implement the policy of washing eggs next year, it is bound to face with equipment upgrade, cold chain transportation, egg preservation and grading. Therefore, the objective of this project is to investigate and study the cleaning, preservation technology, and grading method of shell eggs in the United States. In addition, we`re going to understand the shelf life, shelf environment, labeling of washed eggs and other related issues.
