The biological properties of this protein include the increasing the iron utilization in the gastrointesteinal tract, antibacterial and antioxidation. Gene engineering technology is utilized to generate Lactobacillus casei that contains human lactoferrin cDNA in order to produce lactoferrin. The transgenic Lactobacillus casei has been confirmed to contain hLF .This Lactobacillus casei can be incorporated into kefir to produe hLF.
