2022-10-262024-05-14https://scholars.lib.ntu.edu.tw/handle/123456789/661260茶是過去數千年來最受歡迎的非酒精飲料之一。 基本上,種植在不同的地理環境的茶葉會有各自不同風味。國內茶飲商機大,帶動商用茶產業鏈,其中在精製茶生產端原料需求極大。商用茶原料的穩定性相當重要,為了穩定原料品質與供貨正常,現有精製茶廠需利用人為風味輪感官品評判定品質後,將不同批次原料進行拼配,統計分析可應用協助分析轉換,以提高產品穩定度,以降低對人為感官品評的依賴,以期達到自動化商用茶拼配目標。除此之外,本案需藉由統計分析擴大於茶葉相關試驗研究,以增進茶葉相關科學研究,政策執行與產業發展。 Tea is one of the most popular nonalcoholic beverage in the past thousands of years. Basically, tea grown in different geographical environments will have different flavors. The domestic tea beverage business has great business opportunities, driving the commercial tea industry chain, in which the demand for raw materials in the production of refined tea is huge. Therefore, the stability of commercial tea raw materials is very important. In order to stabilize the quality of raw materials and ensure normal supply, existing refined tea factories need to use artificial flavor wheel sensory evaluation to judge the quality, and then blend different batches of raw materials. Statistical analysis can be applied to assist in analysis conversion to improve product stability and reduce dependence on human sensory evaluation, in order to achieve the goal of automated commercial tea blending.
