2008-01-012024-05-17https://scholars.lib.ntu.edu.tw/handle/123456789/682573摘要:沙門氏菌是造成全球人類食物中毒的主要病因,食用污染沙門氏菌的家禽產品為重要原因之一。本計畫的主要目的在於建立我國一套家禽沙門氏菌檢測的標準方法。本年度計畫將繼續改進上年度所測試的家禽沙門氏菌分離與鑑定方法。國際標準化組織(ISO)的ISO 6579:2002作業程序主要是針對食品檢體,2007年新發佈的6579:2002/Amd.1:2007(E)則針對糞便及環境檢體所制定的作業程序,本計畫擬以此國際標準方法為參考藍本,針對本國家禽飼養環境與條件作沙門氏菌監測研究,並進一步制定適用我國之家禽場及相關產品沙門氏菌分離與鑑定標準作業程序。本年度將整合蛋雞、商用蛋與家禽屠體等三個重要項目,使得本計畫更加完整。同時本年度本計畫將進行較大規模之田野調查,得到較正確完整之流行病學資料,以利防檢疫策略之制定。另將輔導較嚴重污染之養禽場或屠宰場進行初步之改善措施,作為將來家禽沙門氏菌污染清除防治之參考。<br> Abstract: Salmonella remains one of the leading cause human`s food poisoning cases in the world. A major factor has been attributed to consumption of uncooked poultry products contaminated with Salmonella. The objective of this project is to develop the standard methods for the detection of Salmonella at poultry farms in Taiwan. In this study (2008), we will consequently improve the procedures developed in 2007. Consulting with two documents, ISO6579-2002, an international standard specifies a horizontal method for the detection of Salmonella of food and animal feeding stuffs, and ISO6579- 2002/Amd.1:2007(E)A, detection of Salmonella spp. in animal feces and in environmental samples from the primary production stage, we will make some studies to understand the suitability of these methods in detecting of the poultry`s Salmonella, and finally set up the standard operation procedures for monitoring and controlling the Salmonella contamination events at poultry farms. In addition, the three potentially contamination sources, chicken slaughterhouses, egg-laying farms, and commercial eggs will be included and studied in this project.
