2006-01-012024-05-15https://scholars.lib.ntu.edu.tw/handle/123456789/664710摘要:自我國稻米市場開放後,國內稻米市場之品項日趨複雜。為管理日趨複雜的市場品牌,國際上開始著手建立品種或產區標示制度,並且以科學方式輔助鑑定,除了以外觀、氣味等可用感官觀測特性作為判別依據之外,更以DNA指紋圖譜辨別品種,或以礦物元素、同位素含量判別作物產區。我國在稻米品種鑑別技術上已達相當成效,但仍缺乏有效的產地判別技術。作物礦物元素含量圖譜分析是目前國際上最常應用的產地判別技術,因此本計畫擬延續本研究室先期試驗之結果,擬以ICP(Inductively coupled plasma)分析技術瞭解國內外稻米之多種礦物元素含量之特性,並利用各品種及產地間多種礦物元素含量之綜合圖譜,再整合其他可能應用之稻米性狀(如稻米外觀及理化性質),期望建立國內外稻米特性資料庫及稻米產地判別技術。此外,稻米中各種礦物元素含量是營養品質與口感品質的重要影響因子,本研究也可瞭解我國稻米內礦物元素之含量特性,有助於確保我國稻米之市場區隔性與價值。<br> Abstract: After joining WTO, import of foreign rice has complicated the management of rice market of our country. Technology of identification of the production origin should benefit the effective management of local rice market. Analysis of multi-elements content profiling has gradually been shown as an effective method for the discrimination of production origin of crop products including rice. The objective of present project is to develop technique for differentiating geographic production origin of rice grains. In our previous study we have developed a procedure that can determine the multi-elements content profiles for local and foreign rice grains, by using ICP-AES instrument. In the current study more rice samples from local and foreign countries are to be collected. Data bank of multi-elements content profiles of these samples is to be built up. Statistic analysis through the data bank will be performed to explore the possibility of differentiate production origin of rice samples. An integrated protocol including multi-elements profiling and other characteristics is further expected to be approached to develop a practical and effective technique for the identification of geographic origin of rice grains in Taiwan market.稻米礦物元素含量產地判別ricemineral contentproduction origin稻米產區判別技術之研究-稻米中多種元素含量圖譜分析之應用
