Abstract
In solid-state fermentation (SSF), the digestion of substrate by microorganisms can be divided roughly into two phases: an adhesion phase and a cell colonization/substrate digestion phase. The dynamic behavior of the system for the second phase is modeled stochastically. The time dependence of the mean amount of biomass, solid substrate, and the corresponding variances are examined. The results of numerical simulation reveal that SSF is characterized by an appreciable randomness in the value of the system variables. © 1988 Academic Press Limited.
