Abstract
This study presents simultaneous voltammetric sensing of vanillin (VAN) and guaiacol (GUA), two important phenolic compounds related to the antioxidant level and taste of coffee, using an electrodeposited copper hexacyanoferrate (CuHCF) as a sensor material. The electrodeposition process of CuHCF was optimized, revealing that solutions without excess potassium ions and with a pH of 2 yielded uniform, stable films with enhanced current density. CuHCF exhibited sensitivities of 0.31 µA∙cm−2∙µM−1 for VAN and 0.26 µA∙cm−2∙µM−1 for GUA, respectively, with limits of detection of 1.34 µM and 1.75 µM. The simultaneous detection was achieved by correcting the signal interference of GUA to VAN, maintaining 92 % and 90 % of individual sensitivities for VAN and GUA, respectively. Real sample analysis using coffee and ice cream demonstrated average recovery rates of 81–109 %, validating the sensor's applicability in complex matrices. This work highlights the potential of CuHCF-modified electrodes for flavor molecule detection, offering a promising approach for integrating Prussian blue analogues (PBAs) into real-time food safety monitoring and flavor recognition.
